Wholewheat Flours
Basic Bread Recipe (Breadmaker)

Ingredients


1 cup Four Leaf 100% wholewheat flour
1 1/4 cups Four Lear 85% flour

1 cup water
1 dessertspoon sugar
1 tablespoon oil
2 teaspoons yeast
½ teaspoon salt

Method

Follow breadmaker instructions.

Breadmaker Hints:

* "Four Leaf" 85% flour may be used;
* If using normal white flour, add some "Four Leaf" 100% flour to enhance the flavour;

A little Bread Improver mix is recommended (I use 1 teaspoon of Wonderfoods Tangy Vitamin C added to the liquid).

Breadmakers come with a capacity for various sized loaves. This recipe is for an old Panasonic breadmaker, which has a small bucket. For larger loaves, add half the recipe again or double recipe for a full-sized loaf.

Wholewheat Flours
Basic Bread Recipe (By Hand)

Ingredients

1.3kg Four Leaf 100% wholewheat flour
1.1 litre tepid water
pinch of salt
5 teaspoons dried yeast

Method

Place ½ flour in large bowl.
Add yeast, salt and water.
Beat well - three hundred times!
Mix in remaining flour, turn out and knead for 10 mins.
Place in bowl, cover with plastic and let stand in warm place for an hour or more.
Knock down and knead for a short time.
Place in bowl, cover and let stand for a further hour.
Knock down and knead lightly.
Divide into 2 loaves or 24 rolls.
Place loaves in tins and stand for 5 minutes or form rolls and place on trays and stand for 3
minutes.
Bake loaves at 450ºF for 30 minutes.

Half quantity may be used.
This dough makes a wonderful pizza base.
Use light flour for a lighter loaf

A little Bread Improver mix is recommended (I use 1 teaspoon of Wonderfoods Tangy Vitamin C added to the liquid).
