Sweet Potato Hotcakes 1 cup plain flour 1 egg, lightly beaten ½ cup Coconut milk reduced
fat 1 cup Sweet Potato, peeled
and grated Freshly ground black pepper 1 teaspoon of Olive oil or Coconut

Sauce Ingredients
1 can of organic tomatoes, diced 1 teaspoon Coriander 1/10 teaspoon of Wonderfoods Stevia Powder
To make Sauce Add canned tomatoes,
coriander, stevia powder (in a pan and heat). Simmer for a few minutes. Drizzle sauce over hotcakes
to serve. Makes
