Sweet Potato Hotcakes

 

1 cup plain flour

1 egg, lightly beaten

½ cup Coconut milk reduced fat

1 cup Sweet Potato, peeled and grated

Freshly ground black pepper

1 teaspoon of Olive oil or Coconut Oil
 
Sauce Ingredients

1 can of organic tomatoes, diced

1 teaspoon Coriander

1/10 teaspoon of Wonderfoods Stevia Powder 

 

  1. Place the flour in a medium-sized bowl. Using a whisk, stir in the beaten egg and milk, mixing until combined. Stir in the grated sweet potato with the pepper.
  2. Brush a non-stick baking dish with Natrim Coconut Oil over medium heat. Place large spoonfuls of the mixture into the dish. Brush mixture with more Natrium Oil. Bake in hot oven for 20-30 minutes. Turn and cook 1-2 minutes on the other side. Repeat with the remaining mixture. Set aside cooked hot cakes in a warm place.

 

To make Sauce

 

Add canned tomatoes, coriander, stevia powder (in a pan and heat). Simmer for a few minutes.

Drizzle sauce over hotcakes to serve.
