Tomato Salad
The Terracotta Cottage


5 medium tomatoes, quartered or 20 cherry tomatoes
2 tablespoons basil, chopped
½ tablespoon Coconut Oil or Olive Oil
3 tablespoons lemon juice
Sea salt and pepper to taste

4 cups of Mixed greens: snow peas, beans, baby zucchini, or other greens

 

1.    Marinate the tomatoes in a mixture of a tablespoon basil, oil, sea salt and pepper for 4 hours. Stir tomatoes occasionally and baste with the marinade.

2.    Combine the greens with remaining basil and arrange in a salad bowl. Arrange tomatoes on greens. Toss well before serving.
